Every batch of XOLO begins in the Cuyutlán Lagoon, well back from the Pacific.
But getting those delicate crystals from the Lagoon into a finished bag takes patience.
Because our Fleur de Sel forms naturally — it is not produced from pumped Pacific water — we have a short harvest window, basically from March through June, with the finest crystal formation peaking during the hottest, driest month of May. That gives us a tight window of roughly 40 optimal production days.
Hence the name White Gold — due to its rarity.
Once our Fleur de Sel has been harvested, dried in the sun and gentle breezes, and bagged, that is it until the next year.
No shortcuts. No production line. We wait for nature to give us what we need.

WHY XOLO?
XOLO takes its name from
the Xoloitzcuintli, Mexico's
ancient hairless dog.
Like our little namesake, we're unmistakably Mexican, resilient, and a little unconventional.
Our Fleur de Sel is harvested the same way sea salt has been gathered for generations
— by hand, right here in Cuyutlán.
