Making our XOLO Fleur de Sel means working with Mother Nature — and sometimes fighting with her.
Here on the Pacific coast of Mexico, the gentle currents and the sun disappear behind clouds for days.
The rainy season is both a blessing and a curse. After six, seven, sometimes eight months with no rain, we need it. The land needs it. The plants need it, the aquifer needs it. But when the rains finally arrive, they can arrive with a vengeance.
Rain and wind and high tides rolls in. Humidity hangs around for days. During hurricane season, the Pacific Ocean has a very clear way of reminding us who's actually in charge.
The hurricane season, here on the Mexican Pacific will be officially end in November.
Mother Nature always gets the final word.
Our 2026 harvest, drying season is over. Our Fleur de Sel is dried and bagged and selling on Amazon, or contact us.
Now we wait to see what the spring of 2027 has in store for us.

WHY XOLO?
XOLO takes its name from
the Xoloitzcuintli, Mexico's
ancient hairless dog.
Like our little namesake, we're unmistakably Mexican, resilient, and a little unconventional.
Our Fleur de Sel is harvested the same way sea salt has been gathered for generations
— by hand, right here in Cuyutlán.
